The Best Broccoli Cheddar Soup

It has been freezing here the last few days. The dogs run out on the deck and turn right around and run back inside. So much for them taking advantage of a freedom run off the leash! It's cold and makes me want to run back inside for warm soup.

I was just starting to play with food recipes when I discovered this one a couple of winters ago. I swapped out some basic ingredients like cheese and milk for Daiya brand cashew cheese and almond milk. Too much dairy can cause bags under the eyes. It was fantastic! It boosted my confidence in my ability to find ways to make healthy delicious meals.


Since winter is the time of year many people get sick, what is the best thing to eat? Foods that boost your immunity like the broccoli found in my broccoli cheddar soup.

That is just one of the many benefits of broccoli. It has many more like it:

Ingredients:


- 2 medium broccoli florets, chopped

- 2 pouches of Daiya Deluxe Cheese Sauce

- 1 tomato diced

- 1 yellow onion, diced

- 12 cups of almond milk

- 4 tbsp. Bragg's. Nutritional Yeast Seasoning


Instructions:

  1. Empty Daiya cheddar pouches and almond milk in a crock pot.

  2. Turn the crock pot to high.

  3. Chop and dice the onion, tomato., and broccoli.

  4. Add the vegetables with the nutritional yeast and stir.

  5. Turn down to low and cook for at least 4 more hours.

  6. Stir occasionally.

Healthy foods help your body fight aging from free radicals. They also help give your body the nutrients it needs to fight off infection and illness.
