Start off the New Year...

It's new year, so you might want to start it off right with breakfast each day. Having enough energy to take on the day is so important! I just happen to have a really healthy breakfast recipe that tastes great. It's even easier to make these egg stuffed avocados.


Ingredients:


- 1 large avocado

- 2 small eggs

- white cheddar cheese

- salt & pepper to taste

- oven safe parchment paper

- miniature bread pan


Instructions:


  1. Heat the oven to 400 degrees.

  2. Line a small loaf pan with oven safe parchment paper.

  3. Cut the avocado in half and remove the seed.

  4. Carve out a bit more of the avocado to ensure the egg will fit. If a bit slides over the sides, do not worry about it.

  5. Top with cheese.

  6. Add salt and pepper

  7. Cook for 20-30 min.

The eggs are a great source of protein. The avocado is a healthy source of fat. I remember when I discovered this recipe. I was newly diagnosed with diabetes. Scrambled eggs, crust less quiche or over medium eggs was getting old. It was such a simple recipe but tasted fantastic! It made me realize, I just had to keep looking for more diabetic friendly recipes. So I thought I'd share what I've found.
