It's new year, so you might want to start it off right with breakfast each day. Having enough energy to take on the day is so important! I just happen to have a really healthy breakfast recipe that tastes great. It's even easier to make these egg stuffed avocados.
Ingredients:
- 1 large avocado
- 2 small eggs
- white cheddar cheese
- salt & pepper to taste
- oven safe parchment paper
- miniature bread pan
Instructions:
Heat the oven to 400 degrees.
Line a small loaf pan with oven safe parchment paper.
Cut the avocado in half and remove the seed.
Carve out a bit more of the avocado to ensure the egg will fit. If a bit slides over the sides, do not worry about it.
Top with cheese.
Add salt and pepper
Cook for 20-30 min.
The eggs are a great source of protein. The avocado is a healthy source of fat. I remember when I discovered this recipe. I was newly diagnosed with diabetes. Scrambled eggs, crust less quiche or over medium eggs was getting old. It was such a simple recipe but tasted fantastic!
