Introducing: The Deep Dish Meatza

Updated: Oct 19, 2020

Oh how I missed pizza! Every time I turned around, someone was ordering one. I could always snag a piece and tear off the top to eat the cheese with toppings. It was messy, not to mention the feeling like you're wasting some of the pizza!

I got tired of missing out. It sparked another research project until I found a gem. Usually when I find recipes, I have to modify them so much that they aren't the same recipe. I created this recipe for a deep dish Meatza. Or you can take out the meat and just use vegetables for the Vegza version. Once you've tried it, adjust the recipe and add in your favorite vegetables or meats. Swapping out the regular mozzarella for the Daiya brand protein cheese source for anyone with dairy intolerance. Basically it's an awesome treat; and my new football game food!

- 1 cup mushrooms

- 2 cups mozzarella cheese

- 1/2 cup parmesan

- 14 black olives

- 1/2 yellow onion

- 2 cups cherry tomatoes

- 1 small sweet pepper

- 30 pepperonis

- 1 tsp oregano

- 1 tsp rosemary

- 1 tsp basil

- 1 minced garlic clove

- 1/4 tsp stevia leaves or 10 liquid drops

  1. Cut all the vegetables, parmesan, & 1/2 of the pepperonis into large chunks and put in a food processor.

  2. Pulse the ingredients 8-10 times. You just want the vegetables sliced up, not pureed.

  3. Toss the ingredients into a skillet on medium heat.

  4. Pre-heat the oven to 360.

  5. Add all your spices.

  6. Cook until all the water is steamed out for a more solid deep dish.

  7. Put the mix in a 9" cast iron skillet. You could swap this out for an 8x8 cake pan.

  8. Cook in the oven for 40 min.

  9. When the cheese is golden in color and the pepperoni is crisp, remove and allow to cool for 10 min.

Please remember that different foods affect people differently. Tomatoes have been known to affect my blood sugar. Feel free to adjust the recipe to your personal tastes. Enjoy! When you get a chance to try this recipe, please take a picture and share it with me.
