Magic Muffins

Eggs are great for a diabetic breakfast. Protein doesn't spike blood sugar. I love them scrambled, poached, sunny side up, boiled, or in a quiche. Sometimes I do get tired of just eggs. So I decided to dress them up a bit with some sausage.


Ingredients:


- 1/2 lb sausage

- 10 eggs

- 1 clove garlic minced

- 1/2 cup fresh steamed or thawed frozen spinach

- 1/2 cup fresh steamed or thawed frozen kale

- 1/2 cup heavy whipping cream

- 1/2 cup shredded cheddar chees

- 1/4 tsp salt

- 1/8 tsp pepper

Steps:

  1. Preheat the oven to 350 degrees F. Grease 12 muffin cups.

  2. Lightly brown sausage in a deep skillet. Strain and put to the side.

  3. In a large bowl add eggs, heavy whipping cream, shredded cheddar, minced garlic, salt, and pepper. Whisk together.

  4. Whisk in the kale and spinach.

  5. Line the base of the muffin tin with the sausage.

  6. Spoon the egg mixture into the muffin cups. Fill 1/2 way.

  7. Bake in the oven for 20 - 25 min. Insert a fork into each muffin. It should come out clean.

  8. All done. Post a picture and tell us what you think.
